Ingredients

  • 5 cups vegetable or chicken broth
  • 2 cups elbow macaroni pasta, uncooked

Instructions

  1. In a stock pot, boil the broth on medium-high heat. Add macaroni pasta and cook just until al dente, about 6-7 minutes. Set aside.
  2. While the pasta is cooking, melt the butter in a saucepan over medium heat. Add flour and whisk constantly to make a roux, about 1-2 minutes until smooth and thickened. Gradually add in milk. 
  3. Add in all cheeses and reduce the heat to low. Stir in the garlic powder, mustard powder, and pepper. Mix until smooth.
  4. Slowly pour the cheese mixture into the macaroni soup and stir until combined.
  5. Garnish with green onions. Serve warm.
