Looking for a breakfast that’s quick, satisfying, and feels like a treat? These overnight oats with a chocolate cookie topping are perfect. They’re creamy, chocolatey, and can be prepared the night before — so your mornings just got a whole lot easier.
For the Oats:
1/2 cup quick oats
1/2 cup whole milk
1/4 tsp vanilla extract
For the Chocolate Topping:
3 tbsp white chocolate melting wafers
Crushed chocolate cookies (as desired)
Prep the Oats: In a jar or container, combine the oats, vanilla extract, and milk. Stir well to make sure everything is evenly mixed. Cover and refrigerate for at least 4 hours, or overnight, to allow the oats to soften and absorb the milk.
Make the Chocolate Topping: Once the oats are set, microwave the white chocolate in a microwave-safe bowl until smooth and melted. Stir in the crushed chocolate cookies until combined.
Assemble and Chill: Pour the chocolate-cookie mixture over your overnight oats. Place the jar in the freezer for about 10 minutes so the chocolate topping can firm up.
